You are jointly responsible for running a current, profitable and efficient rental and/or sales policy of the department.
You determine the selling price and gross profit of a dish according to the raw materials used |
You formulate sound processing guidelines (e.g. via MIS (Menu Item Sheet) |
You prepare a Menu Item Sheet (MIS) for an independent dish. This includes an ingredient list, cost price calculation, selling price calculation, recipe and gross profit calculation. |
You manage stock, orders and deliveries from your own department.
You manage a simple inventory system (from purchase to issue) |
You start a simple inventory management system (purchasing, receiving, stocking and issuing) within a catering business and analyse its operation |
You will prepare an order list and ingredient list for a predetermined dish. |
