Learning outcomes (list)

You are jointly responsible for running a current, profitable and efficient rental and/or sales policy of the department.
You determine the selling price and gross profit of a dish according to the raw materials used
You formulate sound processing guidelines (e.g. via MIS (Menu Item Sheet)
You prepare a Menu Item Sheet (MIS) for an independent dish. This includes an ingredient list, cost price calculation, selling price calculation, recipe and gross profit calculation.
You manage stock, orders and deliveries from your own department.
You manage a simple inventory system (from purchase to issue)
You start a simple inventory management system (purchasing, receiving, stocking and issuing) within a catering business and analyse its operation
You will prepare an order list and ingredient list for a predetermined dish.
