Learning outcomes (list)

Analytical thinking / business economics insight
The student describes the possible cutting techniques and applications of fish and meat. 
The student describes the elements that are taken into account in the organisation and composition of the meals, taking into account the eating habits of the target group and the meal period.
Based on the laws of classical menu-learning and current trends, the student assesses a predetermined menu.
The student assesses the needs and function of nutrients for the human body as well as the foods in which they can be found. 
The student draws the various possibilities of room set-ups related to conference & banqueting activities. 
Process / legislation
The student works out the complete organisation of the production and the operation on the basis of a predetermined menu. 
Project management / sustainability
The student demonstrates with examples how the factor of sustainability is taken into account within the kitchen and restaurant scene. 
Welcoming attitude
The student describes the etiquette used within the restaurant scene based on the target group or situation.
