Learning outcomes (list)

You determine the selling price and gross profit of a dish according to the raw materials used
You formulate sound processing guidelines (e.g. via MIS (Menu Item Sheet)
You elaborate a Menu Item Sheet (MIS) for a stand-alone dish. This includes an ingredient list, cost price calculation, selling price calculation, recipe and gross profit calculation.
You manage a simple inventory system (from purchase to issue)
You start a simple inventory management system (purchasing, receiving, stocking and issuing) within a catering business and analyse its operation
You prepare an order list and ingredient list for a predetermined dish.
You calculate the (theoretical and actual) food cost percentage using an MIS
